I named my practice after the mint family because this plant has healing properties and is also incredibly resilient in the face of stress. To me, mint is a symbol of hope, perseverance, and healing - something I hold for all of my clients.

Background
and Education

My name is Kaytlin Kimball, and I’ve been fascinated by our connection with food and eating since I was in high school. The more I got into the weeds of nutrition research and practices, the more my own mentality shifted. I moved from a rigid sense of what it means to be healthy and “eat right” to a much more expansive lens that views nutrition as just one piece of the puzzle in living an enriching life.
I studied nutrition and dietetics at Cornell University, completed my dietetic internship at Simmons College, and received my masters degree in health education and eating disorders at Plymouth State University. It was not until entering this masters program that I started exploring intuitive eating, HAES, and diet culture. That’s when the beautiful work of partnering with clients in eating disorder recovery clicked into place for me. After working in hospital and higher level of care settings for five years, in 2019 I moved back home to Oregon and started my private practice. I work hard to stay up to date on eating disorder treatment and nutrition counseling practices to provide inclusive, effective, and compassionate services. To supplement my background in eating disorder nutrition counseling, I have completed training in Intuitive Eating, Motivational Interviewing, Mindful Eating, Acceptance and Commitment Therapy, body image work, family based treatment, and trauma informed care. When I'm Not Working...

I’m typically chasing around my preschooler and toddler - we have fun! Our current favorite activities include making cookies, finding worms in the garden, and playing peekaboo with the closet curtains. I’m grateful to be raising my girls not far from where I grew up in the beautiful Pacific Northwest. There are so many places, old and new, to explore - I’m all about the nature walks. My other two main hobbies are gardening and taking pottery classes at my local art studio. In other words - I might be a little bit obsessed with playing in mud!
My officemate. Ginny is my German wire-haired pointer who is almost always in the room with me during sessions (off camera). She is usually sleeping on the couch, sending clients her unconditional support from afar.
